Greek cuisine restaurants increased dramatically with the advent of the new migration. In 1966, for example, there was only one Greek cuisine restaurant in the entire city of Chicago. By 1978, there were over twenty full-menu Greek cuisine restaurants in the city and hundreds of establishments featuring a selection of short-order Greek foods. Almost all of the new Greek-food restaurants were owned by recent arrivals. y and New England, in a curious ethnic turnabout, new Greek immigrants began to operate pizza parlors.
